How do vacuum sealers work?

Vacuum sealers have space at the top that can be closed with a flap or lid. You activate the machine and set the vacuum time and temperature. Then you put the food you want to preserve in a vacuum bag and place it with the opening on the sealing bar in the vacuum chamber. Between the opening of the bag and the contents, about seven centimetres should remain free. A clamp in the vacuum chamber ensures that the vacuum bag does not move. After closing the lid, the food bag is vacuumed and automatically sealed. The vacuum process first removes the air from the package and then seals it airtight by means of heating.

Which foods can be packed with a catering vacuum sealer?

You can use a vacuum sealer to professionally preserve various types of food. Because almost all the air is sucked out of the bag, food packaged in this way can sometimes last up to five times longer. For an optimal result and as long as possible preservation, it is important that the products are fresh. Moreover, not all ingredients, flavourings or food can be stored under vacuum conditions. For example, mushrooms and other fungi, as well as garlic cloves, do not lend themselves to this. If you want to store vegetables fr a longer period of time, you will have to blanch them before vacuum-packing them. This is necessary to make spoilage-inducing enzymes in the vegetables inactive.

How do vacuum seal machines differ from vacuum sealers?

The main difference between a vacuum seal machine and a vacuum sealer is that vacuum sealer does not have a vacuum chamber to place the packaging in. This means that the food bags are not packed in the machine, but that the part containing the food remains outside the sealer. The opening of the bag is placed in the sealing part of the machine so that the air can be sucked out. As with vacuum seal machines with a vacuum chamber, heating takes place to seal the package. Vacuum sealers take up less space than vacuum seal machines. Another advantage that vacuum sealers have over vacuum seal machines is that you can pack food more tightly with a vacuum sealer.

How do you maintain professional vacuum sealers?

As with all packing equipment, the degree of wear and tear on vacuum sealer depends on how often you use the unit. For example, keep a close eye on the condition of the sealing ring in the vacuum pump. If you do not change the ring after it suffers wear, leakage may occur. Also, check the sealing strip regularly.
