Different types of catering dishwashers
Most professional kitchens need more than one industrial catering dishwasher. Often you have so many dirty dishes that the dishwashing has to be done fast. What's more, not all the crockery can be cleaned in the same dishwasher. There are different types of dishwashers, including the glass dishwasher, the front loader dishwasher, the pull-through dishwasher and the pan dishwasher.
Glasswasher: for all your glassware
Do you have a small business with just glassware, or do you just want to save space? Then the glasswasher is a good choice. This type of dishwasher is ideal for washing glassware and small crockery. The machine cleans glasses and also prevents them from becoming dull.
Front loader dishwasher: ideal for the average amount of dishes
Do you have a lot of dishes in your kitchen? Then an industrial front loader dishwasher is a useful investment. Within two minutes the dishwasher will process dozens of plates, glasses and cutlery so you can serve your guests quickly again. There are models, which fit 40 x 40 cm baskets and 50 x 50 cm baskets.
Continuous dishwasher: for when you really have a lot of dishes
You mainly see the pull-through dishwasher in larger catering establishments. You can easily connect this machine to stainless steel rinsing tables that have a pre-rinsing nozzle. Your dishes are clean again in four quick steps:
1. Put all the dishes in the dishwasher basket and rinse them clean on the supply table first.
2. Slide the dishwasher basket to the dishwasher to clean the dishes for two minutes.
3. Then slide the clean dishes through to the drainage table and let the water evaporate for a short time.
4. Finally, put the clean dishes away and tidy up the dishwasher basket.
Pot washer: for large pots and pans
The pot washer, also called the tool washer, is extremely useful for cleaning large pots and pans that do not fit in a standard size dishwasher. This large industrial dishwasher can also be used with excellent results in a bakery or for butcher's tools.
What characterises a good industrial dishwasher?
Every catering establishment and every professional kitchen is different. Choosing a good industrial dishwasher depends on the type of kitchen and business you have.
Do you have a pub with a small restaurant? Then opt for a glasswasher to wash your glassware quickly and efficiently. For an average amount of work, the front loader dishwasher is a very suitable appliance for a small restaurant, medium-sized lunchroom or company kitchen.
If you have a larger restaurant with a lot of covers, think about an industrial dishwasher, possibly in combination with rinsing tables, so that you can first rinse the dirty dishes. Kitchens with large utensils, pots or pans will benefit greatly from a pot dishwasher for bigger cleaning jobs.
The specialists at Maxima Kitchen Equipment can give you excellent advice on choosing a good dishwasher to suit your situation.
How do you use a professional dishwasher?
How you use an industrial dishwasher depends, of course, on the brand and model of appliance you buy. Therefore, always read the enclosed manual carefully. Operating a catering dishwasher is generally quite simple:
1. Turn the appliance on with the on/off button. After the appliance has filled itself with water, the water is automatically heated up.
2. Now place the dishes in a dishwasher basket and put them in the dishwasher. It is advisable to first rinse or wipe off any food residue with a brush.
3. Close the door and press the wash button to start the thorough wash programme. You can leave the wash button pressed so that the machine starts automatically when you close the door.
4. After the program has finished, open the machine and remove the basket.
5. Allow the dishes to dry briefly outside the machine and then you can store them.
Standard catering dishwashers have an automatic rinse pump. The larger dishwashers also have an automatic soap pump and drain pump. At Maxima these are called the Ultra models (VNG350/VN400/VN500).
What rules must a dishwasher in a hygienic kitchen comply with?
A hygienic workspace is essential for dishwashing. Stainless steel is the material of choice for professional catering dishwashers, rinsing tables, worktops and other kitchen materials. Stainless steel parts are easy to clean and are not easily damaged by food residue. In addition, stainless steel is very robust so that it hardly scratches.
Also, we cannot ignore choosing the right cleaning agents. The right dishwashing detergents, with a good concentration of active ingredients, are very important for a nice and hygienic result from your dishwashing. Pay attention to your choice, as the cheapest detergents generally contain fewer active ingredients and therefore do not clean as well.
For hygiene reasons, speed is a decisive factor when buying a new industrial dishwasher. The sooner a dishwasher processes the dirty dishes, the sooner you will have enough clean dishes to serve subsequent diners, and the dirty dishes won't stay in the kitchen as long.
Did you know that a powerful catering dishwasher is able to completely clean a dishwasher basket within two minutes?
How do you clean an industrial dishwasher?
Because most catering dishwashers consist of easy-to-maintain stainless steel parts, all you need is a little soap and water.
1. First, remove all traces of food residue with a damp cloth.
2. Disinfect by going over the tables and tap with warm water and some detergent.
3. Don’t forget to clean the outside and the handle of the dishwasher.
4. Empty the dishwasher filter and clean it under the tap.
5. Turn on the dishwasher without dishes and use a de-scaling agent and a special cleaning product to clean the inside of the dishwasher.
Regularly disassemble and thoroughly clean the machine's washing arms and nozzles to prevent clogging and limescale build-up. The dishwasher's filter should be emptied regularly and you should also keep the edges of the door clean.
Tips for buying a catering dishwasher
Buying a professional catering dishwasher is an investment that needs some thought. What do you need to pay attention to when buying a dishwasher? We can give you a few tips:
Consider the size of your kitchen
Rinsing tables and dishwashers come in various sizes, from half a metre to almost two metres wide. The depth is also variable. Do you have a small kitchen? Then look for a smaller model so you can keep enough space free for your walking routes.
Amount of dishes to be washed
Also, pay attention to the capacity of your dishwasher. How many seats do you have? How many covers do you serve on a busy evening? The larger the dishwasher, the more dishes you can wash in a basket and the faster you can fill baskets one after the other.
Luminous flux or power current
Do you have luminous flux or power at the location? For the first option, you need a 230V machine and for power you need a 400V model. Also, take a good look at which plug you need to connect the dishwasher to the mains.
Location of the drain
Before you buy a dishwasher, first check where the drain is in your kitchen. If it is low to the ground, a standard model is sufficient. If you have a higher drain, or if it is a bit further away, add a stainless steel base or go for an Ultra model. In a standard model the washing water runs down, but in an extended model, there is a drain pump that pumps the dirty washing water away.
What are the advantages of a catering dishwasher?
You can't really compare the Maxima dishwasher with a built-in dishwasher. In household kitchens, you mainly find built-in dishwashers from Siemens, Bosch or Miele, but also, for example, an IKEA dishwasher. These dishwashers have much longer washing and rinsing times than catering dishwashers. For example, the shortest program of a standard Beko dishwasher takes 30 minutes, while a program of a professional dishwasher only takes 1, 2 or 3 minutes.
In addition, household dishwashers have lower washing power and less rinsing power than an elite Maxima dishwasher. Specifically, the stronger water jets ensure better cleaning of even the dirtiest dishes. Also, home dishwashers are not suitable for professional continuous intensive use. They can't cope with so much work and get clogged faster. You can easily clean a catering dishwasher as the nozzles are easy to unscrew, while the washing arms can also be cleaned quickly.
Are you looking for a mini dishwasher? No problem, catering dishwashers also come in a small size. Whatever dishwasher you choose, home or professional, in the catering industry you will need to de-scale the dishwasher. If you go for a second-hand catering dishwasher, we advise you to take a good look at the age and condition of the used catering dishwasher. We regularly see that it is better and cheaper to just buy a new Maxima catering dishwasher.
Pay close attention to the above points if you are mainly looking for a cheap dishwasher. Don't just choose a household Whirpool dishwasher or AEG dishwasher, but look carefully to see if a professional catering dishwasher would suit you better.
