A combi steamer combines the functions of a hot air oven and a steam oven. This allows professional kitchens to prepare a wide variety of dishes using just one appliance. You have the option to circulate dry or humid hot air or even both simultaneously. This means you can bake, roast and grill as usual, while also enjoying the added benefits of steam.

What are the features of Maxima's professional combi steam ovens?

With Maxima's touch-controlled combi steamers of 6 X 1/1 GN and 10 X 1/1 GN, the larger version increases in height rather than width. This means that this combi steam oven will always have a width of 50cm and a depth of 89cm. Most appliances operate on three-phase current (440V), but some can be used with 230V.

The combi ovens offered in Gastronorm sizing have different models for 1/1 GN and 2/3 GN trays. There are also variations between combi steam ovens of the same capacity, such as the 5 x 2/3 GN oven and the 11 x 1/1 GN oven. These appliances are available in analogue and digital control versions. However, all other Maxima combi steam ovens are only available in a digital version, which comes with either 99 or 240 adjustable programmes.

The digital models feature an adjustable temperature range of 50 to 270⁰C or 30 to 260⁰C, while other steamers typically range between 100 and 275⁰C. With a digital combi steam oven, you can precisely set the steaming time, as these models have 10 steam levels ranging from 10 to 100%.

TIP: Consider ordering a stainless steel support frame with a tray storage rack. This will ensure the safety and security of your combi steam oven while having your dishes readily available for use. For select models, an extractor is also available as an accessory.
